100% Oat Bread

I'm sharing this recipe because it's really good and 100% oat bread recipes are hard to find.  I had to make my own because the new eating plan we are trying doesn't allow us to have wheat.  We are following the Eat Right 4 Your Blood Type Book and it's been interesting.  Especially the connection between the way we eat and the diseases that particular blood types are more prone to have.  Here is the recipe.  Enjoy!

100% Oat Bread 
Ingredients

2 ¼  tsp. instant dry yeast

2 ¾  cups oat flour

1 ½ cups warm water (120-130 Degrees)

½ cup honey, agave or sugar

½ tsp. salt

3 tbsp. olive oil


Mix together flour and yeast for 30 seconds.  Add the remaining ingredients and stir for 2 minutes.  Cover for 10 Minutes and let the dough rest. Stir again.  Cover and let rise for 1 hour in a warm place (or until double).  Oil a loaf pan.  Place dough in the pan and cover to let rise for 20 minutes. Preheat oven to 350° F and bake the loaf for about 75 minutes, loosely covering with foil after the first 15 minutes to prevent excessive browning.

A long time?

You could say that it's been a while since my last post, but that would be an understatement!  Life has it's way of being demanding, but the growth that comes from the trials is worth it.  Besides having Marc's Aunt live with us for 3 months, and starting homeschool last fall, I also took on a part time job working on our Chruch's website.  I love the work!  Who knew that I would be a website tech?  Well God did, and it's been a huge blessing to our family!  Check out what I've been up to at www.hpcc.cc

Fresh Mango Salsa


This is a super easy, fresh and flavorful recipe that I’ve been serving up for my family. The salsa is not spicy which we like and is rather refreshing on a hot summer day. If you are looking for some heat you could easily omit the garlic and add in some chopped jalapeno.

Ingredients
2 mangoes diced
1 cucumber diced
2 tablespoons of minced garlic
2-4 tablespoons of lime juice (fresh or concentrate)
1 small red onion diced
1 bunch of cilantro leaved chopped

Directions

1. Dice or chop all of the ingredients as listed above. You can choose a find dice or a more chunky dice depending on the texture you like for salsa.

2. Mix all the ingredients together in a bowl.

3. Serve with your favorite chips for a fresh easy appetizer.

Summer Fun!

Keeping three little active boys busy usually results in a lot of fun activities, and a lot of mess!  I've had to be more creative than usual with our van being in and out of the shop this summer.
